the everyday :: vancouver pastry school

van pastry school collageHappy Friday! What do you have planned for the weekend? Lately, I have been feeling exhausted when I wake up. You know… always playing catch up… always trying to get one step ahead. I was hoping to take a few days off to do nothing, but decided to squeeze in a mini mid-week break to Seattle. I find that I relax best when I’m away. Do you feel the same way?

Robert has been taking baking classes at the Vancouver Pastry School since last November. So far, he has participated in 4 pastry classes ranging from the basics to the perfect afternoon tea and he just completed his first artisan bread baking class last Tuesday. I don’t have much of a sweet tooth, but now that he has signed up for 3 more bread classes including learning how to make croissants, I think I am in trouble!

{ chocolate } chocolate chip cookies

I had completely forgotten about these chocolate chocolate chip cookies until we made a batch of coffee ice cream (more on that later!) the other day and I figured that this would be a perfect accompaniment! These cookies are super rich and decadent and perfect for the chocolate lover!

Ingredients:

  • 1/2 cup flour
  • 2 tbsp sugar
  • 4 squares of semi sweet chocolate
  • 1/2 tsp of vanilla
  • 1/4 cup brown sugar
  • 1/8 tsp baking soda
  • 2 tbsp unsalted butter
  • 1 large egg
  • 1/4 cup chocolate chips

Preheat oven to 350F. Makes about 9 cookies.

  • Mix flour, brown sugar, sugar, and baking soda. Set aside.
  • Melt chocolate and butter on the stove or microwave.
  • Stir in vanilla and flour mixture into the chocolate and butter.
  • Add egg and mix.
  • Add chocolate chips.
  • Make 9 balls and bake for 15 minutes.

Who’s excited to eat some gluten free treats? Last year, I was lucky enough to pick up a peanut butter cookie from the Gluten Free Epicurean prior to her selling out half way through the show. For those sticking their noses up to the words gluten free, trust me, that cookie was delish. And reading the comments of who blog readers are most excited to see at Got Craft on Sunday, May 8th, you can be sure that there will be a line up at this table.
